My husband and I love a good spicy, cheesy dish, and this one hits all of the marks AND it's super easy. Check out this Easy Baked Queso Chicken, adapted from Butter and Baggage!

INGREDIENTS

  • boneless chicken breast cut into halves
  • cup Buttermilk (OPTIONAL)
  • 2 teaspoons taco seasoning
  • Salt and pepper, to taste
  • 10 ounces can diced tomatoes and green chilies
  • 1 cup yellow queso dip (in a jar on the chip aisle)
  • 1 cup pepper jack and cheddar cheese, shredded

INSTRUCTIONS

  1. OPTIONAL: If you do this, your chicken will be more tender and juicy. If you don't have time, don't worry. You can skip this step! Place chicken in ziplock bag with buttermilk and let sit overnight or at least for 30 minutes. Drain, and pat dry.
  2. Preheat oven to 375º.
  3. Sprinkle chicken with taco season and salt and pepper. Place in a glass baking dish.
  4. Drain tomatoes and chilies and place half on chicken, cover with queso and place the rest of the tomatoes on top. Cover with grated cheese mixture.
  5. Bake for 25-30 minutes, until instant thermometer reads 155º. They will continue to cook once removed from the oven.
