INGREDIENTS

  • 1 pound peeled and deveined shrimp
  • 2 chicken breasts sliced into cubes
  • 1 medium lime, slice and juiced
  • 1 white onion, sliced to fit on skewers
  • 1 green pepper, sliced to fit on skewers
  • 2 tbsp cracked black pepper
  • Sprinkle of salt
  • Wood skewers

INSTRUCTIONS

  1. Grab two gallon-sized resealable plastic bags. Place the shrimp in one and the chicken in another.
  2. Split spices and lime juice between two bags. Shake around the distribute the juice and spices. Place slices of lime in the bags as well! Seal bags and marinate for 2 hours.
  3. Boil a large pot of water. Place skewers inside to clean and keep them damp so they don't burn when you grill them.
  4. Place chicken and vegetables on skewers, alternating chicken, onion, and green pepper.
  5. Place shrimp on their own skewers.
  6. Grill chicken kabobs for 2 minutes on all 4 sides with grill heat on medium. The internal temperature should be 165 when done.
  7. Grill shrimp kabobs for 2 minutes on both sides until the shrimp are pink and opaque.
  8. Serve immediately. Enjoy!
